Super Easy Chicken Pad Thai ON THE GRILL

Sometimes there’s just not enough time in the day to make a big, complicated dinner. With this recipe for Super Easy Chicken Pad Thai on the Grill, you will have a hearty meal full of protein and flavor in no time. All you need is some leftover chicken, and veggies. 


  • 6 ounces of leftover chicken, shredded or chopped – this easy rotisserie chicken will make loads of leftovers
  • 2 tbsp. oil
  • ½ of an onion, sliced
  • 2 cups of mixed frozen vegetables
  • ½ of a sweet bell pepper, sliced
  • 1 clove of garlic, minced
  • 2 portions of rice vermicelli noodles, uncooked
  • hot water
  • 1/3 cup of prepared pad thai sauce
  • 3 tbsp. crushed peanuts
  • 2 wedges of lime 


Step 1
Heat oil in your Napoleon Stainless Steel Wok over the side burner of your grill. Add the onion and cook for about a minute before adding the frozen vegetables, and bell pepper. Cover with a lid for about five minutes.
Step 2
Bring your kettle to a boil and soak the vermicelli noodles in just enough hot water to cover them, about 5 minutes, until al dente.
Step 3
Add the garlic and the chicken and cook uncovered for a few minutes. Add the pad thai sauce. Drain most of the water from the noodles before adding them to the wok. Stir fry for a few minutes more.
Step 4
Serve topped with crushed peanuts and a slice of lime.
